Strawberry Thyme Scones with a Lemon Glaze
Makes approximately 8 large scones

Ingredients for the scones:
- 2 cups fresh strawberries, stemmed
- 2 Tbsp sugar, divided
- 1 cup all-purpose flour
- 1 cup whole wheat flour
- ¼ tsp salt
- 2 tsp baking powder
- 1 Tbsp fresh thyme, finely minced
- 3 Tbsp butter
- 3 Tbsp apple sauce
- 1 egg
- ⅔ cup low fat milk
Ingredients for the lemon glaze:
- 2 Tbsp fresh lemon juice
- ½ cup powdered sugar
Directions:
- Preheat oven to 400°F
- Cut the strawberries into ¼ inch pieces and toss with 1 Tbsp sugar.
- In a large bowl, combine the flours, salt, baking powder, thyme, and remaining sugar. Add the butter and applesauce, and fold the mixture together with your hands until it resembles crumbs the size of small peas.
- Add the strawberries to the bowl and coat them well with the flour mixture.
- In a separate bowl combine the egg and milk, and add them to the flour mixture. Using a spatula, mix everything well. Add more flour as needed if the dough is too wet and sticky. Turn the dough over onto a floured surface and shape it into a round 8 inch ball.
- Coat a 9” circular pan with non-stick cooking spray. Place the dough into the center of the pan, and press it down to the edges. Bake for 20 to 30 minutes or until golden brown.
- Five minutes before removing the scones from the oven, make the glaze by mixing the lemon juice with the powdered sugar.
- Cut the scones into 8 pizza-shaped pieces, and drizzle with the lemon glaze.
