Stovetop Frittata
Recipe makes about 6 servings

Ingredients
- 1/4 cup olive oil
- 1 small onion, diced
- 1/2 bell pepper, chopped
- 1 zucchini, cubed
- 1 yellow squash, cubed
- 1 medium tomato, diced
- 1/3 cup sliced green onions
- 4 cloves garlic, minced
- 12 Large Eggs
- 1/2 cup milk
- 3/4 cup parmesan cheese
- Salt, black pepper, seasoning salt, lemon pepper to taste
Directions
- Heat oil in a medium frying pan over medium heat.
- Add the onion, bell pepper, zucchini, squash, tomatoes, and green onions, and sauté for about 10 minutes or until soft. Add the garlic and sauté for 1-2 more minutes.
- Whisk together the eggs, milk, cheese, and seasonings. Pour the mixture into the pan over the veggies, making sure the egg mixture is well distributed in the pan.
- Cover the pan and cook for 20-25 minutes, or until the top looks firm.
