Roasted Potato & Sweet Pepper Salad
Makes about 10 servings

Ingredients

3 pounds red potatoes,
washed and diced
- 3 sweet bell peppers in a variety of colors, diced
Dressing

¼ cup olive oil

1 clove garlic, minced

1 tbsp lemon juice

1 tbsp red win vinegar

1 tbsp Tzatziki flavor
dip mix

2 tsp honey
-
1 tsp yellow mustard
- 1 tsp salt
Directions
- Preheat oven to 350ºF. Spread potatoes on baking sheet, spray with olive oil or cooking spray, and roast for about 20 minutes. Add peppers and continue roasting for 5-10 minutes. Once roasted, place vegetables into a large bowl.
- In separate bowl, whisk dressing ingredients together, then pour over potato and pepper mixture and toss to distribute dressing.
