  1. Preheat oven to 350ºF. Spread potatoes on baking sheet, spray with olive oil or cooking spray, and roast for about 20 minutes. Add peppers and continue roasting for 5-10 minutes. Once roasted, place vegetables into a large bowl.
  2. In separate bowl, whisk dressing ingredients together, then pour over potato and pepper mixture and toss to distribute dressing.
