Frozen Yogurt with Roasted Peaches

While home-made ice cream is a popular summer treat, our frozen yogurt recipe is sweet, refreshing, and tangy and provides protein and calcium without the saturated fat of ice cream. Take advantage of peach season in Louisiana by serving the frozen yogurt with grilled peaches! These peaches can either be roasted in the oven or cooked on the grill in their foil pouches, and are a delicious compliment to the yogurt while providing a dose of vitamin A, vitamin C, and potassium.

  1. Set oven to 350°F. Cut peaches in half and remove the pits. Place two peach halves onto each piece of foil. To each peach, half add 1 tbsp brown sugar, 2 tbsp chopped pecans, and sprinkle with cinnamon, nutmeg, and salt. Fold up the foil and seal the ends to create pouches. Place the pouches onto a sheet pan and roast them in the oven for one hour.
  2. In the meantime, mix the yogurt, buttermilk, and honey until combined and as smooth as possible (it’s okay if there are a few small lumps). Add the mixture to an ice cream maker and churn for 20 minutes. Transfer the yogurt into a shallow dish (an 8”x8” casserole dish works well), and freeze until peaches are finished roasting.
  3. Once peaches are finished roasting, place ½ cup of yogurt into a bowl with ½ of a peach half.
