Quinoa Lentil Chili
Recipe makes about 10 half cup servings. Each serving is 108 kcals, 2.1 g protein, 7.2 g carbohdyrate, 8.4 g fat (3.5 g monounsaturated & 2.7 g polyunsaturated), 1.2 g fiber.
Ingredients
- 1 lb ground beef, browned and drained
- 1 onion, medium, diced
- 3 garlic cloves, minced
- 2 bell peppers, diced
- 10 oz can Rotel
- 15.5 oz can diced tomatoes
- 15.5 oz can pinto beans, with liquid
- 15.5 oz can kidney beans, with liquid
- 3 cups beef broth
- 1.5 oz can V8 Vegetable Juice
- 1 cup dried lentils
- 1 cup quinoa
- 3 Tbsp chili powder
- 2 tsp cumin
- 1 Tbsp oregano
- 1 tsp basil
- ¼ tsp curry powder
- ¼ tsp red pepper, optional
Directions
- Add all ingredients to the crock pot and cook on high for 6-7 hours.
