Perfect Pumpkin Donut Holes
Makes 30 donut holes

Ingredients
- 1 ¾ cup whole wheat or oat flour
- ½ tsp cinnamon
- ½ tsp nutmeg
- ½ tsp allspice
- 1/8 tsp ground cloves
- 2 tsp baking powder
- ½ tsp salt
- 1 cup canned pumpkin (unsweetened)
- ½ cup skim milk
- ¼ cup granulated sugar
- ¼ cup butter, melted
- 2 large eggs
- 1 tsp vanilla extract
Cinnamon topping:
- 1 Tbsp cinnamon
- ¼ cup granulated sugar
- ¼ cup unsweetened apple sauce
Directions
- In a large bowl combine the pumpkin puree, milk, sugar, melted butter, eggs, and vanilla extract. Whisk together until smooth.
- In a separate bowl combine the flour, cinnamon, nutmeg, allspice, cloves, baking powder, and salt.
- Pour the dry ingredients into the bowl of wet ingredients. Mix until combined and completely moist.
- Scoop batter by table spoon into greased mini muffin tins. Bake at 350°F for 10-12 minutes. Allow to cool for 2 minutes.
- Combine the cinnamon and sugar for topping in a small bowl. Dip each donut hole into the applesauce and then roll into the cinnamon sugar mixture.
