Pizza Pinwheels
Makes 12 servings (5 pinwheels per serving)

Ingredients
- 2 (15 oz) can cannellini beans, drained, liquid reserved
- ¼ cup liquid from the canned beans
- 1 (6 oz) can tomato paste
- 2 tbsp lemon juice
- 2 tsp olive oil
- 2 tsp minced garlic
- 2 tsp ground oregano
- 2 tsp ground basil
- 1 tsp salt
- 1 cup shredded mozzarella cheese
- 6 large tortillas (whole wheat, spinach or sun-dried tomato)
Directions
- Add all the ingredients except the mozzarella cheese to a food processor and pulse for 4-5 minutes until smooth.
- Place the mixture into a bowl and stir in the mozzarella cheese.
- Spread ½ cup of the mixture evenly onto each tortilla. Roll the tortillas up tightly in plastic wrap and refrigerate for at least 30 minutes.
- Remove plastic wrap. Trim off the ends and cut each tortilla into ½ to ¾ inch slices.
