Pizza Dip
Makes 1 ½ cups (6 servings, ¼ cup per serving)
1 serving = 170 kcals, 13g protein, 20g carbohydrate, 4.5g fiber, 4.5g fat
Ingredients
- 1 (15oz) can cannellini beans, drained, liquid reserved
- 2 tbsp liquid from the canned beans
- 1/3 cup tomato paste (about half 6oz can)
- 1 tbsp lemon juice
- 1 tsp olive oil
- 1 tsp minced garlic
- 1 tsp ground oregano
- 1 tsp ground basil
- ½ tsp salt
- ½ cup shredded part skim mozzarella cheese, divided
- 3 oz of turkey pepperoni
Directions
- Place the pepperoni slices onto a baking sheet in a single layer and bake at 425F for 5-8 minutes or until crispy.
- Add all the ingredients except the mozzarella cheese and pepperoni to a food processor or blender. Pulse for 3-4 minutes or until smooth, and then transfer the mixture to a bowl and stir in half of the mozzarella.
- Place the dip into an oven safe dish and top with remaining mozzarella. Bake at 425F for 10 minutes or until the cheese is slightly browned.
- Serve the dip with the toasted pepperoni slices for dipping.
