Summer Veggie & Sausage Pasta Skillet

Ingredients

4 oz dry pasta

8 oz sausage, sliced

1 Tbsp olive oil

1 cup diced zucchini
-
1 cup diced squash
-
1 cup diced red onion

1 cup diced eggplant

¼ cup chopped parsley

½ tsp salt

¼ tsp black pepper

¼ tsp garlic powder
- ¼ cup parmesan cheese
Directions
- Cook pasta in boiling water until al dente. Drain and set aside.
- Heat a large skillet over high heat. Add the sausage and sauté until browned, then transfer the sausage to a bowl. Lower the heat to medium and add the olive oil, veggies, parsley, and seasonings to the skillet. Sauté until soft, about 10 minutes.
- Add the pasta and sausage back to the pan with the veggies, parsley, and seasonings. Sauté for a few minutes, until everything is combined. Sprinkle cheese over the top and serve.
