Summer Veggie & Sausage Pasta Skillet

  1. Cook pasta in boiling water until al dente. Drain and set aside.
  2. Heat a large skillet over high heat. Add the sausage and sauté until browned, then transfer the sausage to a bowl. Lower the heat to medium and add the olive oil, veggies, parsley, and seasonings to the skillet. Sauté until soft, about 10 minutes.
  3. Add the pasta and sausage back to the pan with the veggies, parsley, and seasonings. Sauté for a few minutes, until everything is combined.  Sprinkle cheese over the top and serve.
