Kiwi Basil Mock-Mojito Jello Bites
Makes 8oz of Jello, 1 oz= 20 kcals, 1g protein, 4g carbohydrate, 0g fiber, 0g fat
Ingredients

¼ cup club soda
- 1 packet (7g) plain unflavored gelatin

¾ cup limeade

2 mint leaves

1 basil leaf
-
green food coloring (optional)
- sliced kiwi, mint, & basil leaves to garnish
Directions
- Pour club soda into a measuring glass and sprinkle gelatin on top.
- Add the limeade, basil, and mint to a separate, microwave safe measuring glass or bowl, and microwave for 90 seconds or until boiling. Remove the mint and basil leaves, pour the limeade into the glass with the gelatin, add 1-2 drops green food coloring (optional), and stir for 3-5 minutes.
- Pop the jello out of the molds and top with sliced kiwi.
*this can be small cups, ice cube trays, muffin tins, or use a small casserole dish and cut the jello into cubes or other shapes once set.
