Green Apple Dressing
Makes 10 servings- each serving = 200 kcals, 6.9g protein, 30.3g carbohydrate, 2.7g fiber, 5.4g fat
Ingredients
- 14 oz French or sourdough bread, cut or torn into small (about 1/2”) pieces, preferably stale
- 3 Tbsp salted butter
- 1 large onion, chopped
- 1 tsp salt
- ¼ tsp ground thyme
- ½ tsp ground sage
- 2 Tbsp dried parsley
- ¼ tsp pepper
- 2-3 celery stalks, chopped
- 3 medium carrots, peeled and chopped
- 2 cloves garlic, minced
- 2 granny smith apples, cored and chopped
- 2 ½ cups broth, divided
- 2 eggs
Directions
- Heat oven to 350°. If bread is fresh and soft, spread in single layer on baking sheet and bake until crispy, about 8 minutes.
- Meanwhile, in skillet over medium heat, melt butter and sauté onions and seasonings for 3 minutes or until they begin to soften. Add celery, carrots, and garlic, and sauté for 3 more minutes. Add apples and sauté for 5 more minutes.
- Add bread and mixture from pan to large bowl. In separate bowl, whisk together 1 ½ cup of broth and eggs. Add egg mixture to bowl with rest of ingredients, and gently mix all ingredients until combined.
- Spoon mixture into greased 3 qt baking dish (deeper dishes will work better) and press down. Slowly pour remaining 1 cup of broth over the top. Bake for 30 minutes or until no liquid remains and top of dressing is browned.
