Flaxseed Cookies
Makes about 40 cookies with 100 kcals, 1.6g protein, 13.9g carbohydrate, 1.3g fiber, and 5g fat each.
Ingredients
- 1 ¾ Tbsp Margarine or butter
- 1/3 cup canola or vegetable oil
- 1 cup + 2 Tbsp sugar
- 1/3 tsp vanilla extract
- 1 large egg
- ½ of 1 large egg white
- 2/3 cups whole wheat flour
- 1/3 cup + 2 Tbsp ground flax seeds
- 1/3 tsp baking soda
- 2 cups instant oats
- 1 ½ cups semi-sweet chocolate chips
Directions
- Preheat oven to 375 degrees F.
- In large mixing bowl, combine margarine, oil, and sugar. Add whole egg, egg white, and vanilla, and mix until combined.
- In a separate bowl, combine flour, ground flax seeds, baking soda, and oats. Gradually add dry ingredients to wet ingredients, mixing well after each addition.
- Stir in chocolate chips.
- Spoon tablespoon sized portions of dough onto ungreased cookie sheet lined with parchment paper, and bake for 9 minutes.
