Fruit & Nut Dark Chocolate Bark

Recipe makes 20 servings. Each serving= 135 kcals, 2.1g protein, 11.1g carbohydrate, 1.6g fiber, 10g fat (1.5g monounsaturated fat, 4.3g polyunsaturated fat).Note: this recipe was adapted from Food & Wine magazine.

  1. Spread walnut halves on baking sheet in even layer and toast for 5 minutes at 350°. When cool, chop into small pieces.
  2. Place chocolate into microwave safe bowl and microwave in 30 second increments. Stir chocolate after each increment, until melted.
  3. Fold walnuts, cranberries, and ginger into chocolate and spread out on baking sheet lined with parchment paper.
  4. When completely cooled, cut or break bark into pieces.
