Confetti Bread
Makes 1 Loaf with 12 servings

Ingredients
- 1 small zucchini (1/2 cup grated)
- 1 medium carrot (½ cup grated)
- ½ cup light brown sugar
- ⅓ cup apple sauce
- ⅓ cup plain Greek yogurt
- 2 large eggs
- 1 teaspoon vanilla extract
- ¾ cups all-purpose flour
- ¾ cups whole wheat flour
- ½ teaspoon salt
- 1 teaspoon baking soda
- 1 ½ teaspoons cinnamon
- ¼ teaspoon nutmeg
- 1 teaspoon grated lemon zest
- ¼ cup dried cranberries or cherries
Directions
- Grate the zucchini and carrot. Add the veggies, brown sugar, apple sauce, yogurt, eggs, and vanilla to a bowl and mix until combined. Add the flours, salt, baking soda, and spices to the bowl with veggie mixture and stir until combined. Fold in dried cranberries or cherries.
- Pour the batter into a greased loaf pan and bake at 350F for 20-30 minutes, or until a toothpick inserted into the middle comes out clean.
