  1. Grate the zucchini and carrot. Add the veggies, brown sugar, apple sauce, yogurt, eggs, and vanilla to a bowl and mix until combined. Add the flours, salt, baking soda, and spices to the bowl with veggie mixture and stir until combined. Fold in dried cranberries or cherries.
  2. Pour the batter into a greased loaf pan and bake at 350F for 20-30 minutes, or until a toothpick inserted into the middle comes out clean.
