Chocolate Avocado Truffles
Serves: 8-12 truffles
Each serving is 100 kcals, 1g protein, 9g carbohydrates, 3g fiber, 7g fat
Ingredients
- ½ cup dark chocolate chips
- 1 small, ripe avocado, mashed
- ½ tsp. vanilla extract
- ¼ tsp. cinnamon
- 2 tsp cocoa powder
- ⅛ tsp salt
- Agave nectar to taste
- Cocoa powder, coconut, or chopped nuts for coating
Instructions
- Place chocolate into microwave safe bowl and microwave in 30 second increments. Stir chocolate after each increment, until melted.
- Combine the melted chocolate, mashed avocado, vanilla, cinnamon, cocoa powder, and salt and stir together until smooth. Taste the mixture and add agave nectar (or sweetener of your choice) if desired.
- Refrigerate the mixture for about a half hour. When cooled and hardened, scoop into 8 balls and roll until smooth.*
- Roll each ball in chosen coating and enjoy!
*Additional notes: To make the truffles into shapes with molds, pour the mixture into molds before refrigerating. Then place in the refrigerator for about half of an hour to set.
