Crockpot Chicken Zoodle Soup

  1. Add the chicken, carrots, celery, onion, garlic, parsley, mushrooms, salt, pepper, and water to the crock pot and cook on low for 8 hours.
  2. Open the lid and shred the chicken breast directly in the crockpot, add the corn (and egg noodles, if using) and let the crockpot continue to cook on low for another 30 minutes.
  3. To serve the soup, add a handful of spiralized zucchini to a bowl, and top with chicken soup!
