Black Bean Portabella Veggie Patties
Makes 8 patties.
Ingredients
- 2 cups canned black beans, rinsed
- 2 cups portabella mushrooms, gills removed and cubed into small pieces
- ½ cup red onion, minced
- 2 tbsp minced garlic
- 1/3 cup fresh broccoli, minced
- 1/3 cup carrots, minced
- 1/3 cup red bell pepper, minced
- 1 tbsp Worcestershire
- 1 tbsp steak seasoning
- 1/3 cup tomato paste
- 3 large eggs, beaten
- ½ cup Panko
- ¾ cup grated Romano cheese
Directions:
- In a large bowl mash the black beans with a masher.
- Add the mushrooms, red onion, garlic, broccoli, carrots, red bell pepper, Worcestershire and steak seasoning and mix together evenly.
- Mix in the tomato paste, eggs, Panko, and Romano cheese until thoroughly combined.
- Form patties using ½ cup of the mixture.
- Bake at 350 degrees F for 15-20 minutes.
